Ingrédients

3 egg yolks
1 cup freshly grated Parmesan cheese
2 tsp. freshly ground pepper
5 to 6 drops Scotch Bonnet hot sauce
5 slices bacon (thick-cut), cut into small cubes
250 g pasta, cooked and drained (keep 2-3 tbsp. cooking water)

Préparation

In a frying pan, cook bacon until crisp (save the fat).
In a bowl, mix egg yolks, Parmesan, pepper, bacon fat and Scotch Bonnet sauce.
In the same pan used for the bacon, combine the pasta, cooking water, bacon and sauce.
Serve immediately with freshly grated Parmesan.
