El Paso Chicken Mac & Cheese

Macaroni and cheese is always a winner to please everyone, imagine a Mexican version prepared with tortellini, chicken enhanced with our El Paso Tex-Mex spices, orange cheddar, cheese spread, Mexican beer and jalapeno peppers . A simple recipe to make in 35 minutes that will please your guests or even the whole family if they like to eat a little more spicy.

Ingredients

  • 2 chicken breasts cut into small cubes
  • 2 tbsp. tbsp El Paso Tex-Mex spice
  • 2 tbsp. tablespoon of olive oil
  • 350 g cooked and drained cheese tortellini
  • 2 tbsp. tablespoon of butter
  • 2 tbsp. tablespoon of flour
  • 1 cup of 15% cream
  • 1 ½ cups grated orange cheddar cheese
  • 2 tbsp. tablespoon of spreadable cheese
  • 1 cup of Mexican beer
  • 1 seeded jalapeno, finely chopped
  • 1 French shallot, finely chopped
  • Sliced ​​jalapenos for serving
  • Chopped chives to serve

Preparation

  1. In a bowl, mix the chicken, oil and El Paso Tex-Mex spices well.
  2. In a pan over high heat, brown the chicken with a drizzle of olive oil and continue cooking until the chicken is cooked through and golden brown. Remove from heat and reserve.
  3. In a large saucepan, melt the butter with the flour.
  4. Add the cream and Mexican beer and bring to a boil.
  5. Reduce heat to medium and add grated cheese, cheese spread, jalapeno and shallot. Add salt and pepper to taste.
  6. Mix well and continue cooking for a few minutes. If necessary, adjust the thickness of the sauce with beer.
  7. Mix the tortellini and chicken with the cheese sauce.
  8. Sprinkle with chives and El Paso spices before serving.
  9. Add jalapeno slices if needed.
