Everyone's dream lunch in every bite, which you can then enhance with your choice of Firebarns hot sauce.

Ingrédients

500 g bacon
3 hash browns (defrosted)
2 eggs
2 cooked breakfast sausages
200 ml Bourbon Bacon BBQ sauce
3 tbsp. Mardi Gras Cajun seasonings
Hollandaise sauce to serve
Chopped chives to serve
Firebarns hot sauce of your choice

Préparation

In a bowl, mix potatoes and eggs with 1 tablespoon Mardi Gras seasonings.
On plastic wrap, spread bacon in a grid pattern (about 7 slices by 7 slices).
Spread the potato mixture over the bacon, making sure to leave at least 1 inch of space between the sides.
Add the sausages, it'll take you 1 ½ sausages officially. You can eat during the process.
Roll and compress as much as possible as you would with sushis.
Place the roll on a rack over a baking dish and sprinkle with 2 tbsp. Mardi Gras seasonings.
Place in BBQ or oven at 425°F for about 25 minutes.
Brush with BBQ sauce and continue cooking for about 10-15 minutes.
Cut the roll into 2-centimeter pieces and serve with hollandaise sauce, sprinkled with chives.
Add hot sauce as a final touch, to taste.
