In a large saucepan, sauté the onion with a little butter or olive oil for about 5 minutes. Add the meat and continue cooking until the ground beef is done. Then add the dry spices and continue cooking over medium heat for 4 to 5 minutes.
Place beef mixture in a slow cooker, add remaining ingredients and heat for 6 to 8 hours.
Chili dog preparation
Wrap the smoked sausages in bacon (2 slices per sausage) and cook in your favorite way (BBQ, frying pan or oven). Personally, I prefer the BBQ. When the bacon is almost cooked and crisp, brush with Bourbon Bacon sauce and continue cooking for a few minutes.
Reheat the buns and spread with the remaining Bourbon Bacon sauce. Then add the arugula, sausage and chili. Finish with cheese, sour cream and sliced jalapenos.
