Brush pineapple slices on both sides with spiced rum. Sprinkle both sides with Caribbean jerk spices.
Wrap pineapple slices with bacon (about 2 slices of bacon per pineapple slice).
Cook on BBQ until bacon is crisp. Turn over halfway through cooking.
Sprinkle with chopped chives and serve with your favorite BBQ sauce. We used the Chicken Ribs in this recipe.
