Cajun Tortellini on the Griddle

Cheese tortellini, smoked sausage, shrimp, and corn grilled à la plancha, seasoned with our Mardi Gras Cajun seasonings and Original hot sauce. A generous, spicy, and flavorful Cajun recipe, perfect for summer.

Ingredients

  • 750 g fresh cheese tortellini
  • 450 g smoked sausages, sliced
  • 450 g raw shrimp, shelled
  • 2 cups fresh or frozen corn kernels
  • 3 tbsp. butter
  • 1 tbsp. oil
  • 2 to 3 tbsp. Mardi Gras Cajun seasonings
  • 1 lemon
  • 2 to 4 tbsp. Original Hot Sauce, to taste
  • Salt and pepper
  • Fresh chopped parsley, for serving
  • Freshly grated Parmesan cheese, optional

Preparation

  1. Cook the tortellini in a large pot of salted water, removing them about 2 minutes before the indicated cooking time. They should remain slightly firm. Drain, drizzle with a little oil, and set aside.
  2. Preheat the griddle to medium-high heat. Add a little oil, then grill the sausage slices for 4 to 5 minutes, until well browned.
  3. Add the corn kernels and continue cooking for 3 to 4 minutes to lightly caramelize them.
  4. Push the sausages and corn to one side of the griddle. Melt a tablespoon of butter on the free surface, then add the shrimp. Sprinkle with Mardi Gras Cajun seasonings and cook for about 1 to 2 minutes per side, until pink and just cooked through.
  5. Add the pre-cooked tortellini to the griddle with the remaining butter. Mix gently and grill for 4 to 5 minutes until golden brown and slightly crispy.
  6. Combine all ingredients. Add the juice of half a lemon and Firebarns Original hot sauce. Mix well directly on the griddle to coat everything.
  7. Taste and adjust seasoning. Serve immediately with fresh parsley, Parmesan cheese, and lemon wedges.
