APPLES & BACON PORK LOIN

The perfect recipe to take advantage of apple season in full swing! A pork loin cooked with the popular red fruit enhanced with a sauce prepared with our Memphis sweet and sour BBQ sauce, bacon, and an apple cider of your choice. You can add a few drops of Original hot sauce if you want a slightly more spicy version and finish with chives and microgreens to serve.

Ingredients

  • 2 slices of pork loin (about 3 cm thick)
  • Olive oil
  • Salt and pepper
  • Chives and microgreens to serve

SAUCE INGREDIENTS

  • 2 apples cut into small cubes
  • 6 slices of bacon, roughly chopped
  • 2 tbsp. tablespoon of butter
  • 50 ml of apple cider
  • 50 ml Memphis BBQ sauce
  • 1 cup of cooking cream
  • 4 to 5 drops of Original hot sauce (optional)
  • Salt and pepper to taste
  • 1 C. tablespoon of maple syrup

Preparation

  1. Brush the pork on both sides, add salt and pepper and set aside.
  2. In a frying pan over medium heat, cook the bacon until it begins to crisp, place on absorbent paper and set aside.
  3. In the same pan, brown the apples with the butter for about 5 minutes. Deglaze with apple cider and add Memphis sweet and sour BBQ sauce, cream, Original hot sauce (optional) and maple syrup. Add the bacon and continue cooking over low heat for about 20 minutes. Add salt and pepper to taste.
  4. On the BBQ or in a pan, cook the pork to an internal temperature of 165°F. Leave to rest for 10 minutes before cutting into strips.
  5. Serve the pork with the sauce and sprinkle with chives and microgreens.
