You can add a few drops of Original Hot Sauce if you want a spicier version and finish with chives and micro sprouts to serve.
2 slices of pork loin (about 3 cm thick)
Salt and pepper
Chives and sprouts to serve
2 apples, finely diced
6 slices of bacon, coarsely chopped
2 tbsp. butter
50 ml apple cider
50 ml of Memphis Sweet and Sour BBQ Sauce
1 cup of cooking cream
4 to 5 drops of Original hot sauce (optional)
Salt and pepper to taste
1 tbsp. maple syrup
Brush pork on both sides, season with salt and pepper and set aside.
In a skillet over medium heat, cook bacon until it begins to crisp, place on paper towels and set aside.
In the same skillet, brown the apples with the butter for about 5 minutes. Deglaze with apple cider and add Memphis Sweet & Sour BBQ sauce, cream, Original hot sauce (optional) and maple syrup. Add the bacon and continue cooking over low heat for about 20 minutes. Add salt and pepper to taste.
On the BBQ or in the pan, cook the pork to an internal temperature of 165°F. Let stand for 10 minutes before cutting into strips.
Serve pork with sauce and sprinkle with chives and microgreens.
