BBQ Sloppy Joe Potato Skins

Crispy potato skins topped with a smoky Sloppy Joe mix made with our Ketchup, Mustard, and Japanese Ramen BBQ Sauce, spiced up and extra cheesy. Perfect for a decadent meal to share.

Ingredients

  • 4 potatoes, grilled on the BBQ
  • 1 to 1 1/2 cups shredded sharp cheddar cheese
  • 450 g ground beef
  • 1 onion, finely chopped
  • 1 to 2 tbsp olive oil
  • 1 to 2 tbsp. BBQ seasonings
  • 1/4 cup Firebarns Tomato Ketchup
  • 1 tbsp. Firebarns Baseball Mustard
  • 1 to 2 tbsp. Ramen Japanese BBQ Sauce
  • 2 to 3 green onions, thinly sliced.

Preparation

  1. Preheat the BBQ to medium heat.
  2. Cut the cooked potatoes in half lengthwise. Using a spoon, carefully scoop out some of the flesh to create cavities, leaving a border so the skin holds its shape.
  3. Sprinkle the inside of the potatoes with a little grated sharp cheddar. Set aside.
  4. In a pan, heat the olive oil over medium-high heat. Sauté the ground beef and onion until the meat is well cooked and the onion is tender.
  5. Add the BBQ spices, Firebarns Ketchup and Mustard, and Japanese Ramen BBQ Sauce. Mix well and simmer for a few minutes, until the mixture is hot and slightly thickened.
  6. Generously spoon the Sloppy Joe mixture into the potato skins.
  7. Add a generous layer of grated cheese on top.
  8. Return the stuffed potatoes to the BBQ for a few minutes, just long enough to melt the cheese and heat everything through.
  9. Remove from the BBQ and sprinkle with green onions before serving.
