DOUBLE SMASH BURGER K+M

Smash Burgers are always a winner during evenings with family or friends. This American classic was invented in Kentucky when a local restaurant worker crushed a hamburger with a can. They then discovered that this process made their burgers taste better. Here is our version of this now popular classic from the BBQ world enhanced with our steak spices as well as our tomato ketchup and our baseball mustard on the finish.

Ingredients

  • 2 brioche hamburger buns
  • 600 g ground beef
  • 4 slices of pepperoni
  • 8 slices of orange cheese
  • 4 slices of pickles
  • 5-6 marinated hot peppers in slices (optional)
  • 2 tbsp. tbsp Montreal steak spice
  • Firebarns Tomato Ketchup to taste
  • Firebarns baseball mustard to taste

Preparation

  1. Sprinkle the ground beef with the Montreal steak spices, separate into 4 equal parts and shape into 4 compact balls.
  2. In a pan, grill the pepperoni slices on each side until crispy. Remove and reserve.
  3. In a large, very hot cast iron pan on the stove, on the BBQ or directly on a campfire in camping mode, place the meat balls, add parchment paper on top of the balls and flatten as much as possible using a press or a small cast iron skillet. Cook for about 2 minutes on each side and add 2 slices of cheese on each meatball. Remove from the heat and let the cheese melt over the meatballs.
  4. Toast the buns, spread the bottom with mustard, add pickles, a patty, a slice of pepperoni, another patty, another slice of pepperoni, more pickles and pickled hot peppers. Spread with ketchup and enjoy your meal!
