Ingredients:
400 g. pulled pork with Southwestern sauce* +/- 20 sweet potato fries
- +/- 20 crispy cooked sweet potato fries
400 g. cheese curds
4 tbsp. poutine sauce
-2 tbsp. finely chopped peperoncini peppers
2 large tortillas
Preparation:
On a large tortilla, place 200 g. of pulled pork, add 1 tbsp. of peperoncini, about ten sweet potato chips, 200 g. of cheese curds and 2 tbsp. of poutine sauce.
Fold the tortilla towards the filling, then fold the sides towards the centre and close the tortilla.
Wrap the tortillas in aluminum foil and bake at 425F for about 5 minutes.
SOUTHWESTERN PULLED PORK RECIPE
Ingredients:
-1 pound pork shoulder roast
1/2 cup Firebarns Spicy Mustard
1/3 cup pepper
1/3 cup salt
1/4 cup paprika
3/4 cup Firebarns Southwestern Sauce
Preparation:
Remove rind and excess fat with a knife. Brush the pork on all sides with the spicy mustard. Then mix salt, pepper and paprika and spread the spice mixture evenly over the pork.
Preheat the smoker to 270F and place the piece directly on the center rack for 8 hours. Remove from the smoker, place the piece in a foil pan, pour the Southwestern sauce over the meat and cover with foil.
Return to the smoker for about 2 hours, remove and shred the meat with 2 forks.
Notes: For those who do not have a smoker, you can also make the recipe in a slow cooker or in the oven in a pan. The cooking time will vary depending on the method you choose.
