CARIBBEAN VERRINE

Ingredients

  • 1 1/2 cup diced pineapple
  • 2 tbsp. tablespoon of maple syrup
  • 1 C. 1 tsp Caribbean jerk spice
  • Juice of half a lime
  • 1 cup whipped cream
  • 1 cup of plain yogurt
  • 1 C. teaspoon of vanilla essence
  • 2 tbsp. tablespoon of maple flakes
  • 2 shots of rum (to accompany the recipe)

Preparation

  1. In a bowl, combine the pineapple, maple syrup, Caribbean spices and lime juice. Cover and refrigerate for 45 minutes.
  2. In a mixing bowl, mix the whipped cream, yogurt and vanilla essence well using a whisk. Cover and refrigerate for 45 minutes.
  3. Combine the pineapples and cream in glass containers, sprinkle with maple flakes and serve with the rum shots.
