Texas Twinkies

Green jalapeños stuffed generously with cream cheese, melted Tex-Mex, and ultra-flavorful pulled pork. Wrapped in crispy bacon, rubbed with your choice of BBQ spices, and generously topped with our Texas BBQ sauce—rich, smoky, slightly sweet, with just enough kick to get your taste buds dancing.

Ingredients

  • 8 green jalapeno peppers
  • 250g of tempered cream cheese
  • 200g grated Tex-Mex cheese
  • 200g shredded pork
  • 8 slices of bacon
  • 50g BBQ rub of your choice
  • 100 ml Texas BBQ Sauce

Preparation

  1. In a bowl, mix together the cream cheese, Tex-Mex cheese, and 2 tbsp. of your choice of BBQ spice.
  2. Make a lengthwise cut through the jalapeno peppers and scoop out the insides with a spoon.
  3. Fill the jalapenos with the cream cheese mixture and shredded pork.
  4. Wrap the jalapenos with a slice of bacon.
  5. Sprinkle each side with BBQ spices.
  6. Preheat the BBQ or smoker to 275°F and place the
    Twinkies directly on the grill for 1 hour.
  7. Increase heat to 350°F and brush with Texas BBQ Sauce every 5 minutes for 15 to 20 minutes or until bacon is cooked through.
