Shiitake Pork Smash Dumplings with Peanut Sauce

Ultra-tasty smashed pork and shiitake dumplings, perfectly crispy, served with a creamy peanut sauce and spiced up with our fiery trio: Sriracha, Japanese Ramen BBQ Sauce and Steak BBQ Sauce. A flavor bomb signed @sam_foodndrinks.

Ingredients

Dumplings

  • 1/2 lb ground pork;
  • 1 package (15 g) of rehydrated dehydrated shiitake;
  • 1 chopped green onion;
  • 1/2 tsp. minced garlic (1 clove);
  • 1 tbsp. fresh ginger, microplaned;
  • 1 tbsp. soy sauce;
  • 1 tsp. cornstarch;
  • 1/2 tsp. sesame oil;
  • 40 gyoza (or won-ton) wrappers;
  • Vegetable oil for cooking;
  • Julienned cucumbers and carrots for serving.

Peanut sauce

  • 3/4 cup water
  • 1/2 cup peanut butter
  • 1 tbsp. honey
  • 1 tbsp. Ramen Japanese BBQ Sauce
  • 1 tsp. sesame oil
  • 1 tbsp. Firebarns Sriracha Sauce;
  • 2 tbsp. Steak BBQ Sauce.

Preparation

  1. In a saucepan, combine all the sauce ingredients with a whisk and simmer over medium heat for 2 to 3 minutes until smooth.
  2. In a bowl, combine pork, shiitake, green onions, soy sauce, ginger, garlic, cornstarch, and sesame oil and set aside.
  3. On your work surface, lay out the gyoza or wonton wrappers and place 1 tbsp of filling on each.
  4. Using your fingertips, spread the stuffing over the envelopes so as to cover as much surface area as possible.
  5. On the griddle or in a frying pan over medium-high heat, add a small drizzle of oil and cook the dumplings, stuffing side down, first until the pork is golden brown.
  6. Turn over and cook envelope side down until crispy/golden but not blackened.
