Sambal Oelek Shrimps & Corn Ribs

Delicious jumbo shrimp prepared with a tasty marinade enhanced with our Sambal Oelek, honey, paprika, crushed chili and lime zest. All served with corn ribs that will not leave you indifferent enhanced with our Bourbon Bacon BBQ sauce.

Ingredients

  • 12 Jumbo shrimp with tails and shells

Marinade

  • 150 ml olive oil
  • 2 tbsp. Sambal Oelek
  • 2 tbsp. coarsely chopped curly parsley
  • 2 cloves of garlic, finely chopped
  • 2 tbsp. honey
  • 1 tsp. paprika
  • 1 tsp. crushed chili pepper
  • The zest of half a lime

Corn Ribs

  • 2 corns cut into 4 lengthwise
  • 50 ml of Bourbon Bacon BBQ Sauce
  • Chopped green onions for serving

Preparation

  1. In a bowl, mix all the marinade ingredients well.
  2. Place shrimp and marinade in a resealable bag, mix well and refrigerate for 4 hours.
  3. Brush the corn with the Bourbon Bacon BBQ Sauce and place on the BBQ at 400°F, cooking indirectly for about 25 minutes.
  4. Brush the corn with the Bourbon Bacon BBQ Sauce 2 to 3 times during cooking.
  5. On a charcoal or regular BBQ, cook the shrimp over high heat, basting with the marinade several times during cooking.
  6. Sprinkle with green onions before serving.
