CHICKEN, BACON, BROCCOLI AND SPICE ROTINI MARDI GRAS

Discover our Chicken Bacon & Broccoli Rotini, an easy and tasty one pot dish, perfect for a complete family meal. This recipe tenderly combines chicken, crispy bacon and broccoli, all sautéed with Cajun Mardi Gras spices for a spicy kick. Rotini is simmered in creamy chicken broth, topped with melty Monterey Jack cheese and topped with a touch of Firebarns sauce for extra flavor. A comforting dish that is sure to please!

Ingredients

  • 2 chicken breasts cut into small cubes
  • 1 cup of broccoli
  • 6 slices of bacon, roughly chopped
  • 3 tbsp. Cajun Mardi Gras spices
  • 1 gray shallot, finely chopped
  • 2 cups of chicken broth
  • 1 cup of cream
  • 3 cups cooked and drained rotini pasta
  • 1 cup shredded Monterey Jack cheese
  • Original or Bacon hot sauce to taste

Preparation

  1. In a large skillet, cook the bacon with a drizzle of olive oil until crispy. Remove from pan and set aside. In the same pan, add the chicken cubes and 2 tbsp. of Mardi Gras spices. When the chicken is cooked through, remove from the pan and set aside with the bacon.
  2. In the same pan, add the broccoli and shallot and simmer over medium heat for 5 to 7 minutes. Reserve with the chicken and bacon. In the same pan, add the chicken stock and cream and simmer over medium/high heat for 5 to 10 minutes or until the sauce is reduced by half.
  3. Add the pasta and the chicken, bacon and broccoli mixture to the sauce. Mix well and add the cheese. Place in the broiler oven for 2 to 3 minutes or until nicely browned and sprinkle with Mardi Gras spices, adding a few dashes of Original or Bacon sauce to taste before serving.
