Rhum Chipotle Shrimp Tacos & Roasted Peach Salsa

Tacos that taste like summer! Juicy shrimp, crispy chorizo, and roasted peach salsa come together in a perfect sweet, smoky, and spicy balance thanks to our Rhum Chipotle Hot Sauce. Fresh, colorful, and completely irresistible!

Ingredients

Shrimp

  • 450 g large shrimp, peeled and deveined
  • 150 g chorizo, diced
  • 2 tbsp. olive oil
  • 2 tbsp. Rhum Chipotle hot sauce
  • 1 tsp steak spice
  • Salt and pepper

Roasted Peach Salsa

  • 4 ripe peaches, halved
  • 2 tomatoes, halved
  • 2 jalapeños
  • 2 limes, halved
  • 2 green onions
  • Apple cider vinegar
  • 1 tbsp. Rhum Chipotle hot sauce
  • Juice from grilled limes
  • Salt and pepper

Assembly

  • 4 corn tortillas
  • Fresh cilantro
  • Lime wedges

Preparation

  1. Preheat the griddle to medium-high heat.
  2. Place peaches, tomatoes, jalapeños, and limes flesh-side down on the griddle with a little olive oil. Cook until nicely caramelized.
  3. Remove the skin from the tomatoes, peaches, and jalapeños, and chop roughly. In a bowl, add all ingredients, the juice from the grilled limes, a drizzle of apple cider vinegar, and blend with an immersion blender until desired consistency. Set aside in the refrigerator.
  4. Sauté the chorizo until crispy.
  5. Add the shrimp to the chorizo oil and cook for about 1 to 2 minutes on each side. Incorporate the Rhum Chipotle hot sauce at the end of cooking and mix with the chorizo.
  6. Place the tortillas directly on the griddle for a few seconds on each side until slightly crispy but still pliable.
