Blooming Onion Poutine

For memorable game nights with friends, try our revisited version of the Blooming Onion served as poutine. This gourmet creation combines the creaminess of our spicy poutine sauce, made from a unique blend of Bourbon Bacon BBQ sauce and our brand new Sambal Oelek.

Ingredients

  • 2 large white onions
  • 2 cups of flour
  • 3 to 4 tbsp. Cajun Mardi Gras spices
  • 1 cup of milk
  • ½ cup of water
  • 2 eggs
  • 200 g cheese curds
  • Green onions for serving

POUTINE SAUCE INGREDIENTS

  • 1 French shallot, finely chopped
  • 2 tbsp. tablespoon of olive oil
  • 1 C. tsp Sambal Oelek
  • 1 cup beef broth
  • 1/2 cup Bourbon Bacon BBQ sauce
  • Salt and pepper to taste
  • 2 tbsp. cornstarch diluted in ½ cup water

Preparation

  1. Preheat oil in fryer to 390°F.
  2. In a saucepan, brown the shallot with a little olive oil. Add the Sambal Oelek and continue cooking for 2 to 3 minutes.
  3. Add the beef broth, Bourbon Bacon BBQ sauce and bring to a boil. Season with salt and pepper and reduce the heat to medium.
  4. Let simmer for about 20 minutes, stirring occasionally. Add the cornstarch and continue cooking for about 5 minutes.
  5. Cut the top of the onion and remove the first skin. Cut the onion diagonally about 10 times from the top to separate the onion into 10 parts. (Important to keep about 1 to 2 cm from the bottom to keep the onion whole.)
  6. Mix the flour and Cajun Mardi Gras spices and whisk together the eggs, water and milk.
  7. Dip the onion in the flour and mix vigorously to ensure that all parts of the onion are well covered in the flour mixture.
  8. Dip the onion in the milk mixture and dip the onion back into the flour.
  9. Dip the onion in the oil for about 5 minutes.
  10. Serve the onion with the cheese curds and sauce.
