Chicken, Broccoli, Chorizo & Spicy Cheese Sauce Stuffed Potatoes

These stuffed potatoes are the perfect accompaniment for your barbecue grilling this summer. Prepared with a spicy cheese sauce enhanced with our Original hot sauce and Cajun Mardi Gras spices, cubed chicken, chroizo and broccoli, this side dish will definitely steal the show!

Ingredients

  • 4 Russet potatoes
  • 2 chicken breasts cut into small cubes
  • 150g chorizo
  • 1 cup blanched broccoli
  • 3 tbsp. Cajun Mardi Gras spices

INGREDIENTS SPICY CHEESE SAUCE

  • 2 tbsp. tablespoon of butter
  • 2 tbsp. tablespoon of flour
  • 2 cups grated cheddar cheese
  • 2 cups of 2% milk
  • 2 tbsp. tablespoon of spreadable cheese
  • 3 tbsp. tbsp Original hot sauce
  • 3 tbsp. Cajun Mardi Gras spices

Preparation

  1. Brush the potatoes with olive oil, season with salt and pepper and wrap in foil.
  2. Place the potatoes on the BBQ at 375°F for about 1 hour.
  3. On a baking sheet, cook the chicken with a little olive oil and Mardi Gras spices until cooked through.
  4. Add the broccoli and chorizo, cook for 3 to 4 minutes and mix with the chicken.
  5. In a saucepan, melt the butter with the flour. Mix well and continue cooking for about 2 to 3 minutes.
  6. Add the 2 cups of milk and bring to a boil. Add Mardi Gras spices and Original hot sauce.
  7. Reduce the heat to medium and add the spreadable cheese and gradually add the grated cheese and mix well using a whisk.
  8. Make a cut at the top of the potato and dig in about an inch using a spoon.
  9. Add the potato mixture and cover with cheese sauce.
