IRISH POTATO, BACON AND LEEK SOUP

Ingredients

  • 5 potatoes, peeled and diced
  • 1 leek, roughly chopped
  • 1 finely chopped onion
  • 1/2 Irish lager
  • 900 ml chicken broth
  • 7 to 8 slices of bacon, roughly chopped
  • 1/2 cup 15% cream
  • 1 C. tbsp Original hot sauce
  • Chives to serve
  • Salt and pepper to taste

Preparation

  1. In a large saucepan, cook the bacon until crispy. Remove the bacon from the heat, place on absorbent paper and set aside. Add the leek and onion to the pan over medium heat. Continue cooking for 5 to 10 minutes, stirring regularly.
  2. Add the beer, chicken stock, Firebarns Original and potatoes and continue cooking over medium heat for about 45 minutes or until the potatoes are cooked through. Transfer to a blender, add the cream and mix well.
  3. -Serve with chives and bacon on top.
