Pork & Grilled Halloumi Ciabatta

Get ready to sink your teeth into the summer sandwich: juicy pork chops grilled to perfection, well-grilled halloumi, crispy smoked bacon, and our Bourbon Bacon BBQ sauce, which adds just the right amount of smoky, sweet flavor. All served in a crusty ciabatta bun, with a crunchy red cabbage slaw for a fresh touch.

Ingredients

  • 2 ciabatta breads
  • 2 boneless pork chops (about 1.5 cm thick)
  • 4 slices of halloumi cheese
  • 4 slices of smoked bacon
  • 4 tbsp. Bourbon Bacon BBQ Sauce
  • Olive oil
  • Salt and pepper to taste

Red Cabbage Salad

  • 1 cup green salad
  • 1/4 cup thinly sliced red cabbage
  • 1 tbsp. olive oil
  • 1 tsp. balsamic vinegar
  • Salt and pepper to taste

Preparation

  1. Take the chops out 30 minutes in advance to bring them to room temperature.
  2. Brush with a little oil, salt and pepper.
  3. Cook on the BBQ over medium-high heat for about 4-5 minutes per side.
  4. Brush generously with Bourbon Bacon BBQ Sauce during the last minute of cooking. Let rest for 5 minutes, then slice thinly.
  5. Lightly oil the halloumi slices.
  6. Grill for 1-2 minutes per side until nicely grilled and golden brown.
  7. Cook the bacon slices on the top grill of the BBQ or in a pan until crispy. Drain on paper towels.
  8. Mix arugula, red cabbage, olive oil, vinegar, salt and pepper. Cut the ciabatta buns in half and lightly toast them on the crumb side on the BBQ for a
    little crispness.
  9. Serve with spicy mayonnaise and pickles
