SOUTHWEST CHICKEN BREAST AND STRAWBERRY, LIME, JALAPEÑO SALSA

Discover our Southwestern Firebarns Chicken Breasts, marinated in our Southwestern Black Beer & Chipotle BBQ Sauce. Served with a fresh salsa of strawberries, cherry tomatoes, jalapeno, cilantro and lime juice, they offer a delicious blend of refreshing flavors. Perfect for a summer meal!

Ingredients

  • 2 boneless chicken breasts
  • 125ml Southwest BBQ Sauce
  • Salt and pepper
  • Lime wedges for serving

SALSA

  • 1/2 cup strawberries, finely diced
  • 1/3 cup cherry tomatoes, finely diced
  • 1/2 seedless jalapeno, finely chopped
  • 1/4 cup coarsely chopped cilantro
  • The juice of a lime
  • 2 green onions finely chopped
  • Salt and pepper to taste

Preparation

  1. Salt and pepper the chicken breasts on each side.
  2. On the BBQ (ideally) or in a pan over medium heat, cook the breasts for about 10 minutes on each side, brushing with South-West BBQ Sauce.
  3. Cut the breasts into rounds and serve with the strawberry salsa.
  4. Serve with lime wedges.
