Your teenage memories surely surface if we tell you about the famous pocket pizzas. Here is a reinvented version of chicken bacon pizzas prepared with our Bourbon Bacon BBQ sauce and our Cajun Mardi Gras spice blend cooked on the BBQ. A recipe that is sure to please young and old alike on an evening when you don't want to argue with the kids about what you're having for dinner.


  • 2 chicken breasts cut into small cubes
  • 4 slices of bacon, roughly chopped
  • ½ red onion
  • 200 ml Bourbon Bacon BBQ sauce
  • 2 tbsp. Cajun Mardi Gras spices
  • 1 ball of pizza dough


  1. In a pan over high heat, brown the onion with a drizzle of olive oil for 2 to 3 minutes. Then add the chicken and bacon and cook until the bacon and chicken are cooked through. Add the Bourbon Bacon BBQ sauce, mix well and continue cooking for 2 to 3 minutes.
  2. Cut the pizza dough ball into 8 equal parts. On a floured work surface, flatten using a rolling pin.
  3. Place about 2 to 3 tbsp. of the mixture in the center of the pizza dough and close well to make a small pocket and place on a floured pizza tray.
  4. On the BBQ at 500°F, cook the pizzas for about 10-15 minutes or until the pizzas are nicely browned.
