Pistachio Pesto & Tequila Lime Foccacia

Discover our delicious Pistachio Pesto Focaccia, an explosion of flavors! On a pizza dough base, savor slices of prosciutto, salami and coppa, delicately accompanied by fresh mozzarella. All enhanced with a creamy pistachio pesto enhanced with the spicy zest of our Tequila Lime hot sauce. Perfect for an aperitif or a friendly meal, this focaccia will not fail to seduce your guests!

Ingredients

  • 1 ball of pizza dough
  • 8 slices of prosciutto
  • 8 slices of salami
  • 8 slices of Coppa
  • 1 ball of fresh mozzarella
  • 2 tbsp Cajun Mardi Gras seasonings

Pistachio pesto

  • 1/2 cup salted pistachios
  • 1/2 cup olive oil
  • 1 cup fresh basil leaves
  • 1/2 cup parmesan cheese
  • 4 tbsp Tequila Lime Hot Sauce

Preparation

  1. In a food processor or blender, blend all pesto ingredients, gradually adding olive oil until desired texture is achieved;
  2. Preheat stove or pizza oven to 475°F;
  3. Cut the pizza dough ball in half and flatten on a floured work surface. Add a drizzle of olive oil, sprinkle with Mardi Gras seasonings and close the dough in half;
  4. Bake for about 5 to 7 minutes or until the dough is well risen and golden brown;
  5. Cut the dough in half and top with pistachio pesto, prosciutto, salami, Coppa, fresh mozzarella and sprinkle with crushed pistachios.
