Onion Soup Gratin

Beef broth and dark beer form a rich base, enhanced by whole-grain mustard, a drizzle of maple syrup, and melted Gruyere cheese. Ingredients

  • 4 white onions, thinly sliced
  • 1 tbsp butter
  • 1 oz brandy
  • 2 tbsp. black garlic puree
  • 2 tbsp. Rhum Chipotle Hot Sauce
  • 1 tbsp. flour
  • 2 cups beef broth
  • 1 cup of dark beer of your choice
  • 1 tbsp old-fashioned mustard
  • 1 drizzle of maple syrup
  • 1 cup grated Gruyere cheese
  • 8 croutons of baguette bread
  • Salt and pepper to taste
  • Chopped chives for serving

Preparation

  1. In a large saucepan, melt the butter with the sliced onions and cook for 4 to 5 minutes.
  2. Deglaze with brandy to loosen the cooking juices.
  3. Add the black garlic puree, Rhum Chipotle Hot Sauce and flour. Mix well and continue cooking for 2 to 3 minutes.
  4. Add the beef broth, dark beer, old-fashioned mustard and maple syrup and cook over medium heat for 25 minutes.
  5. Pour the soup in equal parts into 4 ovenproof bowls for gratin.
  6. Add 2 croutons of bread on top of the bowl and garnish with grated Gruyere cheese.
  7. Place in the oven on broil for 2 to 3 minutes until the cheese is melted and golden brown.
  8. Sprinkle with chopped chives to serve.
