Eggs Benedict Philly Cheesesteak

Try this perfect fusion of brunch and the traditional Philly Cheesesteak: toasted baguette, thinly sliced sirloin steak, sautéed onions, peppers and mushrooms, runny provolone cheese and poached eggs. We top it off with a lemon hollandaise and season it with our BBQ Steak Sauce for a delicious finish that's absolutely irresistible.

Ingredients

Trim

  • 1 baguette cut in half lengthwise;
  • 250 g of sirloin steak (or sirloin) sliced very thinly;
  • 1 small yellow onion, chopped;
  • 1 green pepper, sliced;
  • 100g sliced button mushrooms;
  • 4 slices of provolone;
  • 2 tbsp BBQ Steak Sauce (or more to taste);
  • Butter for cooking;
  • Salt and pepper.

Poached eggs

  • 4 fresh eggs;
  • 1 tbsp white vinegar;
  • Water.

Hollandaise sauce

  • 3 egg yolks;
  • 125 g unsalted butter, melted;
  • 1 tbsp lemon juice;
  • 1 tsp water;
  • Salt and pepper to taste.

Preparation

  1. In a large skillet, melt a knob of butter.
  2. Sauté the onions until golden.
  3. Add the peppers and mushrooms. Cook for 5 to 7 minutes until tender. Set aside.
  4. Turn up the heat, add a little butter and
    Sear the steak quickly (1 to 2 minutes). Season with salt and pepper, then return the vegetables to the pan with the BBQ Steak Sauce. Mix and remove from heat.
  5. Brush the cut side of the baguettes with a little oil or melted butter.
  6. Grill in the oven or pan until golden brown and crispy.
  7. Bring a saucepan of water with the vinegar to a simmer.
  8. Crack an egg into a small cup.
  9. Stir the water to create a whirlpool, then gently pour in the egg.
  10. Cook for 3 minutes, then remove with a slotted spoon. Repeat for the remaining eggs.
  11. In a metal bowl over a bain-marie, whisk the egg yolks, water and lemon.
  12. Whisk constantly until the mixture thickens slightly.
  13. Remove from heat and slowly whisk in the melted butter.
  14. Season with salt and pepper and add a pinch of cayenne if desired. Keep warm.
  15. Spread the Philly Cheesesteak filling on the baguette halves.
  16. Place the provolone slices on top.
  17. Broil for 2 to 3 minutes to melt and brown the cheese.
  18. Place a poached egg on each serving.
  19. Cover generously with hollandaise sauce.
  20. Add a drizzle of Firebarns hot sauce
    for spicy lovers.
