Meatball Cupcakes

Meatball Cupcakes, Firebarns Style: Beef and sausage meatballs filled with a bocconcini center, nestled in golden croissant dough, topped with a maple syrup marinara brilliantly enhanced with our spicy cayenne sauce. Cheese gratin, fresh basil, ready for your football tailgate!

Ingredients

Meatballs

  • 400 g of ground beef;
  • 400 g of Italian sausage meat;
  • 1 egg;
  • 1/2 cup panko breadcrumbs;
  • 1/4 cup grated Parmesan cheese;
  • 1 tbsp chopped fresh parsley;
  • 12 small balls of bocconcini;
  • Salt and pepper to taste.

Marinara sauce

  • 2 tbsp olive oil;
  • 1 small onion, finely chopped;
  • 2 cloves of garlic, chopped;
  • 1 can (796 ml) crushed tomatoes;
  • 1 tbsp tomato paste;
  • 1 tbsp maple syrup;
  • 25 ml Cayenne Hot Sauce;
  • Salt and pepper to taste.

Other ingredients

  • 2 rolls of crescent dough (Pillsbury style);
  • 1 cup grated Italiano cheese;
  • 1/4 cup additional grated Parmesan cheese;
  • Fresh chopped basil for garnish.

Preparation

  1. In a large bowl, combine beef, egg, breadcrumbs, Parmesan cheese, garlic, parsley, oregano, salt, and pepper.
  2. Shape 12 small golf ball-sized balls and insert a bocconcini ball into the center of the ball.
  3. Cook them in a pan with a drizzle of olive oil for about 6–8 minutes, turning them over to brown them well. Set the meatballs aside.
  4. In the same pan, brown the onion and garlic in olive oil.
  5. Add tomatoes, tomato paste, maple syrup, Cayenne Hot Sauce, salt and pepper.
  6. Return the meatballs to the sauce and simmer for 15 to 20 minutes over low heat.
  7. Preheat oven to 375°F.
  8. Roll out the croissant dough and cut into 12 squares.
  9. Place each square in a lightly oiled muffin tin, forming a small cup.
  10. Place a spoonful of cheese on the bottom, a teaspoon of marinara sauce and a meatball on top, a little more cheese, then a touch more sauce.
  11. Bake at 375°F for 12 minutes, until the pastry is golden brown and the cheese is golden brown.
  12. Serve with chopped basil.
