Mardi Gras Seasonings Corn & Bacon Chowder

Corn season is well and truly underway with this recipe that is perfect for a side dish or to serve to your guests with bread. This corn chowder prepared with bacon and enhanced with our Cajun Mardi Gras seasonings and our Cayenne hot sauce will offer you a unique taste experience.

Ingredients

  • The kernels of 6 corns
  • 3 French shallots, finely chopped
  • 2 potatoes cut into small cubes
  • 1 tbsp. chopped garlic
  • 6 slices bacon, cooked and coarsely chopped
  • 3 tbsp. Cajun Mardi Gras seasonings
  • 2 cups chicken or vegetable broth
  • 3 tbsp. Cayenne hot sauce
  • 1 cup of 15% cream
  • Butter for cooking
  • Green onions for serving
  • Bread baguette for serving

Preparation

  1. In a large saucepan, brown the shallots and garlic with a good tablespoon of butter.
  2. Add corn kernels, potatoes and Cajun Mardi Gras seasonings. Mix well and continue cooking for 2 to 3 minutes.
  3. Add broth and Cayenne hot sauce, bring to a boil. Reduce heat to half and simmer for about 20 minutes.
  4. Add the cream and bacon and continue cooking for about 5-10 minutes.
  5. Sprinkle with green onions, bacon and Mardi Gras seasonings and serve with a baguette.
