Discover our Firebarns Lobster Bacon Mac & Cheese, a luxurious take on the classic. Macaroni is coated in a creamy sauce with Tex-Mex cheese, parmesan, and our spicy Bacon sauce. Add tender lobster and crispy bacon, browned with golden breadcrumbs and garnished with fresh chives. A delicious and spicy feast!


  • 450 g cooked and drained macaroni
  • The meat of 2 cooked lobsters
  • 8 slices of cooked bacon
  • 180 g of Tex-Mex cheese
  • 1/4 cup breadcrumbs
  • 1/4 cup parmesan
  • 3 tbsp. tablespoon of Boivin spreadable cheese
  • 1 C. tablespoon of butter
  • 1 cup of white wine
  • 1 cup of 2% milk
  • 2 tbsp. 1/2 tbsp Bacon Hot Sauce
  • 50 g of flour
  • 1 French shallot finely chopped
  • 1 C. finely chopped garlic
  • Salt and pepper to taste
  • Garnish with chives before serving


  1. In a large saucepan over medium-high heat, melt the butter and sauté the shallot and garlic for 2 to 3 minutes.
  2. Then add the white wine and milk. Bring to a boil and simmer for 2 to 3 minutes. Gradually add the Tex-Mex cheese, mixing well.
  3. Add the Boivin spreadable cheese and Bacon Hot Sauce. Mix well until the cheese mixture is well incorporated and add the flour.
  4. Cook over medium heat for about 5 minutes until the mixture is creamy.
  5. Add the pasta to the cheese mixture and mix well. Roughly chop the lobster meat and bacon, reserving the claws and 2 slices of bacon. Add bacon and chopped lobster to pasta mixture.
  6. In oven- or BBQ-safe bowls or in small cast iron skillets, add the pasta mixture, add the parmesan, breadcrumbs and incorporate the claws and bacon slices. Place in the ovenbroilfor 3 to 4 minutes or in the BBQ at high heat until the cheese on top is toasted.
  7. Garnish with chopped chives and serve.
