Chicken, Broccoli & Cheddar Potato Bombs

Crispy, flavor-exploding balls of mashed potatoes stuffed with chicken, broccoli and melted cheddar cheese. Perfectly browned and spiced with a bold touch of Firebarns Bacon hot sauce and Spicy Bacon Mayo. A gourmet snack that packs a punch in every bite!

Ingredients

  • 4 peeled potatoes
  • 2 tbsp. butter
  • 300 g cooked chicken, coarsely chopped
  • 300 g of coarsely chopped broccoli
  • 300 g grated cheddar cheese
  • 1 cup flour
  • 2 beaten eggs
  • 1 cup Italian breadcrumbs
  • Firebarns Bacon Mayo
  • Chopped green onions

Preparation

  1. In a pan of boiling water, cook the potatoes for about 15 minutes. Drain, add the butter and mash. Leave to cool.
  2. Add chicken, broccoli and cheese. Mix well and shape into balls about the size of a golf ball.
  3. Coat the balls in flour, then in egg and then in breadcrumbs.
  4. In 375°F oil, fry the balls for about 4 to 5 minutes.
  5. Serve with Spicy Bacon Mayo and sprinkle with green onions.
