Family Chow Mein on the Griddle

A classic revisited on the griddle! Chicken strips marinated in teriyaki sauce, crispy vegetables, stir-fried noodles, and a touch of Japanese Ramen BBQ Sauce enhanced with a drizzle of maple syrup.

Ingredients

Chicken

  • 5 kg chicken breasts, cut into thin strips
  • 750 ml store-bought teriyaki sauce
  • 2 tbsp fresh grated ginger
  • 6 cloves garlic, minced

Noodles and vegetables

  • 2.5 kg Chow Mein noodles or egg noodles
  • 1 Napa cabbage, shredded
  • 2 heads broccoli, cut into small florets
  • 4 red bell peppers, sliced
  • 3 large onions, sliced
  • 1 lb (450 g) celery, thinly sliced
  • 1 lb (450 g) carrots, julienned
  • 500 g bean sprouts
  • 2 bunches green onions, chopped
  • 6 cloves garlic, minced
  • 75 g fresh grated ginger

Sauce

  • 250 ml Firebarns Ramen Japanese BBQ Sauce
  • 50 ml maple syrup

Cooking

  • Vegetable or canola oil
  • Toasted sesame seeds (optional)

Preparation

  1. Mix the chicken with the teriyaki sauce, garlic,
    and ginger. Marinate for 1 to 4 hours in the refrigerator.
  2. Cook the noodles according to package directions. Drain, quickly rinse with cold water, then toss with a light drizzle of vegetable oil to prevent sticking.
  3. Preheat the griddle to medium-high heat.
  4. Add a drizzle of oil and cook the chicken until well browned, about 6 to 8 minutes. Set aside.
  5. Add a little oil to the griddle and cook the onions, carrots, celery, and broccoli for about 5 to 6 minutes.
  6. Add the Napa cabbage, red peppers, garlic, and ginger. Continue cooking for 4 to 5 minutes, keeping the vegetables slightly crisp.
  7. Add the bean sprouts and cook for about 1 minute.
  8. Return the chicken to the griddle, then incorporate the noodles.
  9. Pour the Ramen sauce over the mixture, then add the maple syrup. Stir continuously for 3 to 5 minutes so that the noodles absorb the sauce and take on a slight color.
  10. Add the green onions, mix one last time, and garnish with toasted sesame seeds, if desired.
  11. Tip: For an even tastier Chow Mein, let the noodles sear for a few moments on the griddle before mixing them with the vegetables and sauce. They will develop a slightly grilled texture that will make all the difference.
