Fried Eggs with Avocado Tequila Lime & El Paso

Our fried version of the famous deviled eggs enhanced with our Tequila Lime hot sauce and our El Paso Tex-Mex spices. A great way to reinvent this holiday classic the Firebarns way!

Ingredients

  • 6 eggs
  • ½ avocado
  • Juice of half a lime
  • 2 tbsp. tbsp Tequila Lime hot sauce
  • 1 C. tablespoon of mayonnaise
  • 3 tbsp. tbsp El Paso Tex-Mex spice
  • 1 cup Panko breadcrumbs
  • 1 cup of flour
  • 2 eggs
  • 3 slices of bacon, cooked and finely chopped
  • Chives to serve

Preparation

  1. In a large saucepan filled with water, add the eggs and bring to the boil. Reduce heat to medium and continue cooking for 10 minutes. Dip the eggs in a large bowl of ice water.
  2. Peel the eggs, cut them in 2 lengthwise. Remove the yolks and place them in a bowl. Run the egg whites under cold water to clean them.
  3. In 3 bowls, add the flour, 2 crushed eggs and the Panko breadcrumbs and El Paso spice mixture. Dip the egg whites in the flour, then in the eggs, finishing with the breadcrumbs. Fry at 375°F for about 3 minutes or until eggs are nice and crispy.
  4. In a bowl, combine the egg yolks, avocado, Tequila Lime sauce and mayonnaise and mix well until smooth and creamy.
  5. Stuff the fried eggs with the mixture and sprinkle with bacon and chives before serving.
