Double Smash Burger Carbonara

Ingredients

  • 2 brioche buns
  • 400 g ground beef
  • 1 egg
  • 2 tbsp. breadcrumbs
  • 2 tbsp. Montreal Steak Seasonings
  • 3 egg yolks
  • 1 cup grated pecorino
  • 100 g bacon, cut into small cubes
  • 4 slices of bacon (2 per burger)

Preparation

  1. Cut the bacon into small cubes, cook in a pan over medium heat, reserving the fat.
  2. In a bowl, mix well the egg yolks, pecorino cheese, pepper, bacon fat and whisk in a bain-marie for 2 to 3 minutes. Return the bacon cubes to the mixture.
  3. In a mixing bowl, mix the beef, Montreal steak seasonings, egg and breadcrumbs.
  4. Place the meatballs on the baking sheet, add parchment paper on top of the balls and flatten as much as possible using a press or a small cast iron skillet. Cook for about 2 minutes on each side or until desired doneness and remove from heat.
  5. Toast the bread and assemble the burger with the carbonara sauce and grate some pecorino (lots of pecorino).
