Discover our Memphis Firebarns BBQ Pork Chops, a perfect combination of sweet and spicy. Pork chops are seasoned with salt and pepper, then enhanced with our sweet and sour Memphis BBQ sauce. Served with creamy sweet potatoes and Brussels sprouts caramelized with bacon and maple syrup, these chops are topped with green sprouts for a touch of freshness. A tasty and balanced dish!


  • 2 bone-in pork chops
  • Salt and pepper
  • 150 ml Memphis BBQ Sauce
  • 2 sweet potatoes
  • 3 tbsp. tablespoon of butter
  • 1 drizzle of olive oil
  • Salt and pepper
  • 1 cup Brussels sprouts cut into 4
  • 6 slices of bacon, roughly chopped
  • 1/4 cup maple syrup
  • Green sprouts for garnish


  1. Place the sweet potatoes on the BBQ for indirect cooking for about 1 hour.
  2. Season the pork chops with salt and pepper on both sides. Heat the BBQ to medium/high heat. Cook the pieces for about 4 to 5 minutes on each side, brushing with Memphis sauce. Let stand 5 to 10 minutes before serving.
  3. In a cast iron pan, still on the BBQ. Cook the bacon with the Brussels sprouts, maple syrup and a drizzle of olive oil.
  4. In a blender, add the sweet potatoes (skinless), butter, salt and pepper and blend until desired texture. You can add a little cream for a creamier texture.
  5. Serve the pork chops on the sweet potato mash, add the bacon and Brussels sprouts mixture and add some green sprouts.
