choux de bruxelles bbq buffalo bacon

Bacon-wrapped Buffalo-style Brussels sprouts brushed with our buttery Cayenne hot sauce and enhanced with our Cajun Mardi Gras spices. The perfect side dish or starter for your BBQ evenings to serve with a piece of meat of your choice. You can also add Cayenne hot sauce to finish if you prefer a more spicy result!


  • 12 Brussels sprouts
  • 6 slices of bacon
  • 3 tbsp. Cajun Mardi Gras spices
  • 125 ml ofCayenne hot sauce
  • 50g butter


  1. Preheat the BBQ or smoker to 425°F.
  2. Cut the bacon slices in half and wrap half a slice on a Brussels sprout and prick with 1 or 2 toothpicks. Repeat this step with the 12 Brussels sprouts.
  3. Place Brussels sprouts on a cookie sheet lined with parchment paper and sprinkle with Cajun Mardi Gras spices.
  4. Place the plate on the central grill of the BBQ or smoker to cook for 25 to 30 minutes.
  5. In a saucepan, bring the Cayenne hot sauce and butter to a boil. Remove from the heat and brush the choux with a brush 2 to 3 times during cooking.
  6. Increase the BBQ temperature at the end of cooking if you like the bacon a little crispier.
