Chinese Sambal Oelek Chicken Macaroni

Ingredients

  • 3 cups cooked and drained macaroni
  • The flesh of a rotisserie chicken, coarsely chopped
  • 2 celery stalks, cut into small cubes
  • 1 red pepper, cut into small cubes
  • 227 g of button mushrooms, cut into thin slices
  • 1 onion, finely chopped
  • 1 clove of garlic, finely chopped
  • 2 green onions, finely chopped
  • 2 tbsp Sambal Oelek Firebarns
  • 3/4 cup reduced sodium soy sauce
  • Salt and pepper to taste
  • Olive oil for cooking

*Serve with egg rolls or imperial rolls and Memphis BBQ Sauce

Preparation

  1. In a large skillet, cook the vegetables with the Sambal Oelek and a drizzle of olive oil for a few minutes or until the mushrooms begin to brown.
  2. Add the pasta and chicken, mix well and add the soy sauce.
  3. Season with salt and pepper and continue cooking for a few minutes until the pasta absorbs the sauce.
  4. Serve with egg rolls or imperial rolls and Memphis BBQ sauce.
