Cajun Ribeye Breakfast Bagel

A decadent and spicy breakfast bagel: juicy ribeye steak seasoned in-house Cajun style, crispy bacon, sunny-side-up eggs, melted cheese, and maple-caramelized onions. We top it all off with Zac Bulle's spicy mayo boosted with our BBQ Steak sauce and a touch of Cayenne hot sauce. Brunch just got a serious steakhouse kick.

Ingredients

  • 1 ribeye steak weighing 350–450 g (2–3 cm thick)
  • 2 sesame bagels, sliced
  • 4 slices bacon
  • 4 slices orange cheese
  • 4 eggs
  • 1 large yellow onion, cut into thin slices
  • Finely chopped chives or green onions
  • 3 tbsp. maple syrup
  • 2 tbsp. butter, 1 tbsp. oil
  • Salt and pepper to taste

Cajun Seasoning

  • 2 tsp. paprika
  • 1 tsp. salt
  • 1/2 tsp. garlic powder
  • 1/2 tsp. onion powder
  • 1/2 tsp. thyme or oregano
  • 1/2 tsp. pepper
  • 1/4 tsp. cayenne pepper

Mayo Steak / Cayenne

  • 3 tbsp. Zac Bulle Mayo
  • 1 tsp. Steak BBQ Sauce
  • 1 tsp. Cayenne Hot Sauce
  • Ground pepper

Preparation

  1. Remove the ribeye from the refrigerator 30 minutes in advance. Pat dry and lightly oil, then season generously with Cajun seasoning, salt, and pepper.
  2. Melt 1 tablespoon of butter with a drizzle of oil. Add the onion and a pinch of salt. Sauté for 2 to 3 minutes over medium heat. Add the maple syrup and simmer until the onions begin to caramelize.
  3. Cook the bacon until crispy and drain.
  4. Whisk the eggs with 1 tbsp of water or cream, 1/2 tsp of Cajun seasoning, salt and pepper. Cook over low heat with 1 tbsp of butter.
  5. In a hot, oiled cast-iron skillet, sear the ribeye steak for 2–3 minutes per side. Let it rest for 5–10 minutes, then slice against the grain into thick strips.
  6. Toast the bagels and place 1 slice of cheese on each side.
  7. On the cheese base: add the bacon, eggs, second slice of cheese, ribeye strips, caramelized onions, and chives. Drizzle with a little Cayenne Steak Mayo to taste.
