Le Burrito Déjeuner Ultime

Wake up your taste buds with this burrito bursting with flavor! Prepared with love and our El Paso Tex-Mex spices, every bite is an explosion of taste. Our burrito is generously filled with creamy scrambled eggs, spicy sausage, bacon, melted cheese and fresh vegetables. To top it all off, a bold splash of Firebarns Hot Sauce completes this morning delight.


  • 4 large tortillas
  • 250g bacon, roughly chopped
  • 375 g coarsely chopped breakfast sausage
  • 1/4 cup maple syrup
  • 2 tbsp. tbsp El Paso Tex-Mex spice
  • 1 large potato cut into small cubes
  • 1 French shallot, finely chopped
  • 1 seeded jalapeno pepper, finely chopped
  • 1/2 red pepper, roughly chopped
  • 2 tbsp. tbsp Tequila Lime hot sauce
  • 4 scrambled eggs
  • 1/2 cup of milk
  • 100g grated Tex-Mex cheese
  • 4 slices of orange cheese
  • Salt and pepper to taste
  • Olive oil for cooking


  1. In a pan over high heat, brown the bacon and breakfast sauce with a drizzle of olive oil for about 5 minutes. Add the maple syrup, Tex Mex spices, mix well and continue cooking over medium high heat until the sausages and bacon are cooked through. Remove and reserve.
  2. In a large bowl, combine the potato, shallot, red pepper, jalapeno, a drizzle of olive oil and Firebarns Tequila lime. In a frying pan over medium high heat, add the mixture with a drizzle of olive oil and continue cooking for about 10 minutes or until the potato cubes are cooked through. Remove and reserve.
  3. In a bowl, mix the eggs and milk well using a whisk, cook in a pan over medium heat with a drizzle of olive oil. Using a fork, separate the mixture to make scrambled eggs and add the Tex-Mex cheese. Continue cooking for 1 to 2 minutes, remove and reserve.
  4. Place the orange cheese about 2cm down from the center of the tortilla, add the eggs, potatoes and sausage/bacon mixture. Close the tortilla over the filling, fold the sides inward and roll the tortilla. Repeat for all 4 burritos.
  5. Place in the oven or on a panini grill for about 5 minutes or until the cheese is well melted.
