  • 1 lb chuck roast
  • 1 cup beef broth
  • 1 cup BBQ Steak sauce
  • ½ cup of red wine
  • 2 tbsp. tbsp Montreal steak spice
  • 50 ml olive oil
  • 1 cup of arugula
  • 200 g of brie cheese
  • 4 brioche buns
  • 2 onions cut into slices
  • 50 ml of blond beer
  • 50 ml maple syrup
  • Salt and pepper to taste

  1. Brush the piece of meat with olive oil and sprinkle with Montreal steak spices on each side.
  2. In a large ovenproof saucepan, sear the piece of meat on each side and remove from the pan. Deglaze with red wine, add BBQ Steak sauce and beef broth.
  3. Return the beef to the pan, cover and place in the oven at 325°F for 4 hours. Using 2 forks, shred the beef well, mix with the sauce and set aside.
  4. In a pan over medium heat with a drizzle of olive oil, brown the onions for a few minutes. Add the beer and maple syrup and let caramelize for about 15-20 minutes over medium-low heat.
  5. Grill the brioche buns, brush with the steak sauce, add the arugula, brie cheese, caramelized onions and braised beef.
