Broccoli Cheddar Soup with Firebarns Bacon

Creamy and hearty, our broccoli and cheddar soup combines carrots, onion, and melted cheddar cheese, then subtly ignites with Firebarns Bacon Hot Sauce. Guaranteed comfort food for chilly evenings, served with a crusty baguette.

Ingredients

  • 1/2 cup of butter
  • 1/2 cup of flour
  • 1 finely chopped onion
  • 2 grated carrots
  • 1 roughly chopped broccoli
  • 5 cups of chicken broth
  • 1 tbsp. Bacon Hot Sauce
  • 300 g of grated sharp orange cheddar
  • Salt and pepper to taste
  • Serve with a baguette

Preparation

  1. In a large saucepan, melt the butter and flour over medium heat for 3 to 4 minutes. Stir well until the mixture changes color. Add the chicken stock and bring to a boil.
  2. Reduce the heat by half and add the onion, carrots and broccoli. Simmer for about 20 minutes.
  3. Pour the mixture into a blender and purée. Return the mixture to the saucepan, gradually add the Firebarns Bacon and cheese. Season with salt and pepper and simmer for about 10 minutes over low heat.
  4. Serve with a baguette.
