Breakfast Sushis

All the brunch favorites like eggs, bacon, hash browns and breakfast sausage come together in a symphony of flavors in breakfast sushi enhanced with our Bourbon Bacon BBQ sauce and Cajun Mardi Gras spices. Everyone's dream lunch in every bite that you can then enhance with your choice of Firebarns hot sauce.


  • 500g bacon
  • 3 potato pancakes (thawed)
  • 2 eggs
  • 2 cooked breakfast sausages
  • 200 ml Bourbon Bacon BBQ sauce
  • 3 tbsp. Cajun Mardi Gras spices
  • Hollandaise sauce for serving
  • Chopped chives to serve
  • Firebarns hot sauce of your choice


  1. In a bowl, mix the potatoes and eggs with 1 tbsp. of Mardi Gras spices.
  2. On plastic wrap, spread the bacon in a grid pattern (approximately 7 slices by 7 slices)
  3. Spread the potato mixture over the bacon and make sure to leave at least 1 inch of space from the sides.
  4. Add the sausages, it will take you 1 ½ sausages officially. You can eat during the process.
  5. Roll and compress as much as possible as you would with sushi.
  6. Place the roll on a rack over a baking dish and sprinkle 2 tbsp. of Mardi Gras spices.
  7. Place on the BBQ or in the oven at 425°F for about 25 minutes.
  8. Brush with BBQ sauce and continue cooking for about 10-15 minutes.
  9. Cut the roll into pieces of approximately 2 centimeters and serve with Hollandaise sauce and sprinkle with chives.
  10. Add hot sauce at the end to taste.
