  • 24 plain chicken wings
  • 50 ml olive oil
  • 2 tbsp. Cajun Mardi Gras spices
  • 1 cup Firebarns Cayenne hot sauce
  • 50g butter
  • 1 C. tablespoon of honey
  • Serve with ranch or blue cheese sauce
  • Sprinkle with chives before serving


  1. In a large bowl, toss the chicken wings well with the olive oil and Cajun Mardi Gras spices. Place foil on a cookie sheet, add a rack on top and place the chicken wings on the rack. Bake at 425°F for approximately 45 minutes.
  2. In a saucepan, combine Firebarns Cayenne hot sauce, butter and honey. Bring to a boil and remove from heat.
  3. In a large mixing bowl, mix the wings with the sauce well. Return the wings to the grill and broil for 3 to 4 minutes or until nicely crispy.
  4. Serve with ranch dressing or blue cheese sauce.
