MINI LOBSTER ROLL, STRAWBERRIES, LIME AND SRIRACHA MAYO

Ingredients

  • The meat of 2 cooked lobsters, roughly chopped
  • 10 strawberries cut into small cubes
  • juice of half a lime
  • 1 celery cut into small cubes
  • 2 tbsp. tablespoon spicy Sriracha mayo
  • 1 green onion finely chopped
  • Salt and pepper to taste
  • 12 lightly toasted rolls

Preparation

  1. In a bowl, combine all the ingredients and place in the fridge for about 10 minutes before serving.
  2. Stuff the buns with the lobster filling and serve with lime wedges.
