Caramelized Onion Pasta, Sriracha, Roasted Garlic, Bacon & Parmesan

A simple, comforting, and flavorful recipe. These pasta dishes with caramelized onions, roasted garlic, and lardons offer a perfect balance of sweet, savory, and a hint of spice. The roasted garlic brings a melting, rich texture, while Parmesan cheese ties everything together deliciously. An easy dish to make, yet it feels like a revisited classic, ideal for cozy evenings or for impressing guests without overcomplicating things.

Ingredients

  • 4 large onions, cut into strips
  • 1 whole head of garlic
  • 300–400 g pasta (rigatoni, penne, or spaghetti)
  • 200 g bacon lardons
  • ¾ cup grated Parmesan (or more to taste)
  • 3 to 4 tbsp olive oil
  • 2 tbsp maple syrup
  • 2 tbsp balsamic glaze
  • 1 to 2 tbsp. Firebarns Sriracha (depending on desired heat level)
  • Salt and pepper
  • Cajun spices to taste

Preparation

Preheat oven to 375°F (190°C)

  • Place the onions in a large Pyrex bowl.
  • Add olive oil, maple syrup, Firebarns Sriracha, Cajun spices, and balsamic glaze.
  • Mix well to coat.
  • Cut off the top of the garlic bulb (just enough to expose the cloves).
  • Drizzle with olive oil and sprinkle with Cajun spices.
  • Place the garlic in the dish with the onions.
  • Cover with aluminum foil.
  • Bake for 45 minutes.
  • Remove the aluminum foil for the last 10 minutes for more caramelization.
  • Cook the pasta in salted water according to instructions.
  • Meanwhile, cook the bacon in a pan until crispy.
  • Drain the pasta (reserve some cooking water if needed).
  • Squeeze the roasted garlic cloves to extract the pulp.
  • Add to the caramelized onions and mix.
  • Stir in the pasta, bacon, and Parmesan.
  • Mix until everything is well coated.
  • Add a little pasta cooking water if necessary to bind the sauce.
