Salmon Tartar with Strawberries & Spicy Mayonnaise
Ingredients:
  • 450 g fresh salmon
  • 1 green apple cut into small cubes
  • 1 mango, cut into small cubes
  • 2/3 cup pineapple cut into small cubes
  • 1 tbsp. Dijon mustard
  • 2 tbsp. olive oil
  • 1 teaspoon Firebarns Jamaican Scotch Bonnet
  • 1 green onion
  • ¼ cup chopped cilantro
  • Salt and pepper to taste
  • ½ baguette of bread
  • A pinch of allspice
  • A drizzle of olive oil
Preparation Instructions:
  1. On a cutting board, remove the skin from the salmon with a knife. Then cut the salmon into small cubes of about 1 cm;
  2. Combine the diced salmon, apple, mango, pineapple, Dijon mustard, olive oil, Firebarns sauce, green onion and cilantro in a bowl. Mix well, season with salt and pepper and set aside in a cool place;
  3. Slice the baguette into thin slices, spread on a baking sheet, sprinkle with allspice, salt, pepper and a drizzle of olive oil. Broil for about 1 to 2 minutes. Let cool and set aside in a small bowl;
  4. Serve tartar on croutons with lime wedges and arugula shoots.
