Time: 60 minutes
Ingredients:
-5 potatoes, peeled and diced
-1 leek coarsely chopped
-1 onion, finely chopped
-1/2 Irish lager
-900 ml chicken stock
-7-8 slices of bacon, coarsely chopped
-1/2 cup of 15% cream
-1 tbsp. original Firebarns
-Chives to serve
-Salt and pepper to taste
Preparation:
-In a large saucepan, cook bacon until crisp. Remove bacon from heat, place on paper towels and set aside. Add leek and onion to saucepan over medium heat. Continue cooking for 5 to 10 minutes, stirring regularly.
-Add beer, chicken broth, Firebarns Original and potatoes and continue cooking over medium heat for about 45 minutes or until potatoes are cooked through. Blend in a food processor, add the cream and mix well.
-Serve with chives and bacon on top.

Excellent, consistent et épais (j’ai ajouté un brin de lait une fois le mélange bien lisse). C’est une soupe qui pourrait constituer un repas. Le goût est fameux. J’suis pas très potage, mais là, on a frappé fort. Délicieux!
