Ingredients:
-5 potatoes, peeled and diced
-1 leek coarsely chopped
-1 onion, finely chopped
-1/2 Irish lager
-900 ml chicken stock
-7-8 slices of bacon, coarsely chopped
-1/2 cup of 15% cream
-1 tbsp. original Firebarns
-Chives to serve
-Salt and pepper to taste
Preparation:
-In a large saucepan, cook bacon until crisp. Remove bacon from heat, place on paper towels and set aside. Add leek and onion to saucepan over medium heat. Continue cooking for 5 to 10 minutes, stirring regularly.
-Add beer, chicken broth, Firebarns Original and potatoes and continue cooking over medium heat for about 45 minutes or until potatoes are cooked through. Blend in a food processor, add the cream and mix well.
-Serve with chives and bacon on top.
