Ingredients:
- 1 cup flour
- 1 cup cornmeal
- 1 tsp baking powder
- 1 tsp baking soda
- 2 tbsp Cajun spices
- 1 egg
- 1 cup beer
- 2 tbsp Firebarns Original
- 12 smoked sausages
- 12 wooden sticks
- Oil for frying
Preparation:
- In deep fryer or skillet, heat oil to high (375 F);
- In a bowl, combine flour, cornmeal, baking powder, baking soda and Cajun spices. Mix well;
- Add egg, beer and Firebarns. Mix well until batter forms;
- Thread sausage onto wooden stick and dip into batter (use a glass to facilitate dipping);
- Cooking time is approximately 4 minutes: cook in small batches to ensure optimal cooking;
- Serve with hot mustard, mayo or ketchup.
