CHICKEN BBQ & BACON PIZZA POCKET
Your teenage memories are sure to surface when you hear about the famous pizza pockets.
Here is a reinvented version of chicken bacon pizzas prepared with our BBQ Bourbon Bacon sauce and our Cajun Mardi Gras spice blend cooked on the BBQ.
A recipe that is sure to please kids and adults alike on a night when you don't want to argue with the kids about what to have for dinner.
2 chicken breasts, cut into small cubes
4 slices of bacon, coarsely chopped
½ red onion
200 ml of Firebarns Bourbon Bacon BBQ Sauce
1 ball of pizza dough
In a skillet over high heat, sauté the onion with a drizzle of olive oil for 2 to 3 minutes. Then add the chicken and bacon and cook until the bacon and chicken are well done. Add the Bourbon Bacon BBQ sauce, mix well and continue cooking for 2 to 3 minutes.
Cut the pizza dough ball into 8 equal parts. On a floured work surface, flatten with a rolling pin.
Place about 2-3 tablespoons of the mixture in the center of the pizza dough and seal to make a small pocket and place on a floured pizza pan.
On the BBQ at 500°F, cook the pizzas for about 10-15 minutes or until golden brown.
