UNCLE BARNS' CAJUN FOIL PACK
400 g. raw shrimp
5 smoked sausages (Andouille or German style)
2 corn on the cob, cut into sections
600 g. of small potatoes cut in 2
-1/2 cup of olive oil
-2 tbsp. Cajun spices
-1 oz. bourbon
-1 tbsp. Firebarns Original
-1 tsp. minced garlic
Lemon wedges and parsley to serve
In a large bowl, combine all ingredients. Separate mixture into 4 parcels.
Preheat the BBQ to 400F and cook the papillotes for 15 to 20 minutes. Move the papillotes to indirect cooking and continue cooking for about 20 minutes or until the potatoes and shrimp are ready. (The recipe can be done in the oven at the same temperature)
Serve directly in the papillotes with lemon wedges and sprinkle with fresh parsley.
