LOBSTER ROLLS WITH FIREBARNS TEQUILA LIME

Ingredients:

- Flesh of 2 lobsters
- 3 celery, finely diced
- 3 green onions, chopped
- 3 tablespoons mayonnaise
- 2 tablespoons Firebarns Tequila lime
- 4 hot dog buns
- 1 avocado
- Juice of half a lemon
- 3 tablespoons butter
- 4 slices Boston lettuce
- 1 lemon, quartered
- 2 tablespoons olive oil
- Salt and pepper

Preparation:

- In a Magic Bullet style blender, add the flesh of one avocado, 2 tablespoons of olive oil, the juice of half a lemon and one tablespoon of Firebarns Tequila Lime. Season with salt and pepper, mix well until smooth and set aside;

- Coarsely chop the lobster meat, keeping the claws intact. In a bowl, combine lobster meat with celery, green onions, mayonnaise, 1 tbsp Firebarns Tequila Lime. Season with salt and pepper, mix well and set aside;

- Generously butter the rolls on both sides and toast in a skillet over high heat until golden brown and crisp (about 1 minute on each side);

- Serve the Lobster rolls with mashed avocado using a pastry bag (optional). Sprinkle with green onions and lemon wedges.
