Ingredients:
-2 buns
2 slices of Monterey Jack cheese
Store-bought mayonnaise
4 slices cooked bacon
Meatball
400g lean ground beef
-1/2 cup breadcrumbs
- ¼ cup Firebarns Steak
-1 egg
-1 tsp. smoked paprika
Salt and pepper to taste
Guacamole:
-1 avocado
-1 tbsp of Firebarns Tequila lime
-1 drizzle of olive oil
juice of half a lime
Salt and pepper to taste
Lobster:
Flesh of one lobster, coarsely chopped
1 celery, diced
1 tbsp. commercial mayonnaise
-1 tsp of Firebarns Tequila Lime
1 green onion, finely chopped
juice of half a lime
Salt and pepper to taste
Preparation:
In a bowl, combine all the lobster ingredients and set aside to cool.
In another bowl, using a fork or a blender foot, mix the avocado with the remaining ingredients until desired consistency and set aside in a cool place.
By hand, mix all the ingredients for the dumpling and shape into two large dumplings. Cook on the BBQ (ideally) or in a frying pan until desired doneness, add Monterey Jack cheese about 1 minute before removing from heat.
Lightly toast the buns, and layer the burger with the patty, then the bacon, lobster mixture and guacamole.
